THE WINE
The Franciacorta Brut Rosé of the Ferghettina winery is produced with 100% Pinot Noir grapes grown in the vineyards owned by the winery that are located 250 meters above sea level in the heart of the DOCG. The first bottle was produced in 2001.
THE WINEMAKING
The strictly manual harvest takes place towards the middle of August and only the selected grapes are brought to the cellar for winemaking. The whole grapes are gently pressed using the “marmonnier” press, an ancient pressing system that guarantees total respect for the grapes’ characteristics. From this press, only the free-run must is extracted and used because it has the best qualitative features of the Pinot Noir.. The fermentation is carried out in steel tanks at a controlled temperature that varies between 16 and 18 ° C. The base wine rests in the steel tanks until the spring following the harvest when it is bottled for the second fermentation. The wine then ages on the lees for 36 months.
THE TASTING
Antique pink colour with a fine and persistent perlage.; the aroma is elegant with notes of red fruit such as blackberry and raspberry that leave room for hints of bread crust and scents of almond. Fresh and well structured on the palate with a good correspondence between aromas and taste. Excellent persistence.
FOOD PAIRINGS
Perfect with both cooked and raw fish. A must try with shellfish but also with sushi.
