THE WINE
The Franciacorta Brut “Cabochon Double Zero” is an emblematic expression of elegance and refinement of the wines produced by the Monte Rossa winery, in particular this is an assembly of 70% chardonnay and 30% pinot noir grapes.
The winery was founded in 1972 and extends into the hilly area that embraces the lake Iseo. The land is of glacial origin which give great flavor and elegance to the wines. Paolo Rabotti made the winning and farsighted choice, to invest in technology for the production of Italian sparkling wines with great charm and personality. Today his legacy is carried on with tenacity and determination by his son Emanuele.
After the manual harvesting of the grapes in crates, the alcoholic fermentation takes place in 250-liter oak barrels. The wine is then bottles for the second fermentation – champagne method. The wine ages for 48 months on the lees. This sparking wine has been produced since 1985 for a specific reason, select grapes from the Pratone, Barek, Brolo, Palo and Nespoli crus owned by the winery.
Golden yellow with greenish reflections. The perlage is fine and elegant. Also the aroma is important with hints of toasted hazelnuts and coffee that intertwine with sweet notes of pineapple in syrup and candied fruit. Elegant and aromatic on the palate, it closes with salty and mineral notes. Of great persistence.
Excellent as an aperitif and throughout the meal. Must try with raw fish and oysters.
