The wine Sansevé Saten from Monte Rossa Winery
The Franciacorta Sansevé Saten from the Monte Rossa winery is made exclusively from Chardonnay grapes, cultivated in pure form across 22 crus within the 78 hectares of vineyards in the Franciacorta region.
Saten is a registered name by the Franciacorta Consortium and indicates a specific production protocol. This protocol requires the exclusive use of white grapes, a maximum atmospheric pressure of 4.5 atmospheres, a sugar content not exceeding 12 grams per litre, and a minimum ageing period on the lees of at least 24 months.
Winemaking
The winemaking of the Monte Rossa Sanseve Saten DOCG follows the traditional method, also known as the méthode champenoise. After manual harvesting, the grapes are gently pressed to extract the must, which ferments 85% in stainless steel tanks and 15% in oak barrels. After the first fermentation, the base wine is bottled with sugar and yeast to initiate the second fermentation, which occurs in the bottle. This process is followed by ageing on the lees for at least 24 months, which imparts finesse and a fine perlage to the wine.
Tasting Monte Rossa Wine
It has a bright straw-yellow with greenish reflections and a fine, persistent mousse. On the nose, it offers a complex and fruity bouquet, with citrus notes of cedar intertwined with iodine hints and a touch of salinity. On the palate, it stands out for its creaminess and freshness, with a pleasant acidity that makes each sip balanced and refreshing. The finish is long and aromatic, with an aftertaste that recalls fruity notes and wild rose.
Food Pairings
It is ideal with fish appetizers, shellfish, and seafood, but it also pairs well with fish-based first courses or risottos; additionally, the classic method Saten DOCG perfectly accompanies white meats and fresh cheeses. Its versatility makes it an excellent choice for many occasions, from elegant dinners to simple aperitifs.
