Winemaking
The production of Mezzo Secolo begins with a careful selection of grapes from the most suitable vineyards on the Canus estate. After a manual harvest, the grape clusters undergo a gentle pressing to preserve their freshness and aromas. Fermentation occurs in steel tanks at a controlled temperature, followed by a maturation period in wooden barrels for at least 36 months; this process enriches the wine’s structure and aromatic complexity; after bottling, the wine rests in the cellar for 24 months, achieving a perfect balance between freshness and softness, along with a remarkable capacity for ageing.
