THE WINE
The Friulano from the Livon winery, comes from 100% Friulano grapes grown in the property’s vineyards. We are in Ruttars in the Municipality of Dolegna del Collio near Gorizia in Friuli Venezia Giulia. Right in the heart of the DOC Collio, the soil rich in marl and clay (here they call it Ponca), the climate with its temperature ranges and the Alps that protect the territory make this area one of the most suitable for cultivation of grapes especially of white berried vines.
THE WINEMAKING
The grape harvest is rigorously manual; the grapes are placed in small boxes to minimize the time between the harvest and the arrival in the cellar. Winemaking begins with soft pressing and cold maceration, which lasts about eight hours. The must is then cleaned by decantation and decanted into steel tanks for the fermentation phase, which takes place at a constant temperature of 18 °C. The wine then ages in the same steel tanks for another five months; after blending and bottling, the wine rests for a few more months in the bottle before being placed on the market.
THE TASTING
Straw yellow with light greenish reflections; the aroma is pleasant, and notes of ripe fruit alternate with hints of aromatic herbs closing puffs of bitter almond, typical of this vine. Dry and aromatic on the palate, full-bodied with a perfect correspondence between aromas and flavour and a pleasantly bitter almond aftertaste.
FOOD PAIRINGS
Excellent as an aperitif, this Friulano from the Livon winery goes well with fish and white meats. Try it with grilled chicken.
