The friulano from Ronco Severo winery
The Friulano wine from the Ronco Severo winery comes from 100% Friulano grapes grown in the vineyards owned by the winery. We are in Prepotto, in the Collio DOC in Friuli Venezia Giulia. The vineyards are approximately 150 meters above sea level; here, the soil is rich in “Ponca” i.e. marl and sandstone.
If you are looking for an elegant, complex and natural Friulano, you have found it! Stefano Novello’s philosophy is to respect nature, both in the vineyard and in the cellar; there is no use of chemical.
THE WINEMAKING
The grapes are harvested strictly by hand, the harvest is late to allow the grapes to ripen perfectly. Once in the cellar, winemaking begins with destemming. The must ferments on the skins in oak vats with frequent punching down and the sole use of indigenous yeasts. After soft pressing, the wine ages for 24 months in 30 hl Slovenian oak barrels. This is followed by assembly and bottling without filtration when the moon is waning. The wine then rests in the cellar for another year before being placed on the market.
Tasting the Ronco Severo wine
Golden yellow tending towards copper. The aroma is very elegant; you can immediately perceive the scents of wildflowers which then give way to notes of weeds and hints of honey, and candied ginger, to finish with puffs of almond. Well balanced and pleasant on the palate, very fresh and soft with a pleasantly fruity taste and a very long mineral finish.

Perfect with pasta dishes with fish or vegetable sauces, white meats, and medium-hard cheeses.
