THE WINE
The Cabernet Vulpes of the Del Poggio winery is part of the Vulpes line; this line takes its name from the stream that crosses the property and recalls the presence of the typical animals of the Friulian hills, the foxes.
The winery cultivates its vineyards following the voluntarily integrated production specification of the Friuli Venezia Giulia Region, which aims to minimize technical means that impact the environment and promote a natural environmental balance.
THE WINEMAKING
The grape harvest is rigorously manual and takes place in September. Winemaking is the classic in white; the wine ages on the lees for at least four months, and after it is bottled, it rests in the cellar for a few months before being placed on the market.
THE TASTING
Bright and light straw yellow with greenish reflections, the aroma is fresh and fragrant with pleasant notes of exotic fruit such as pineapple and lime, leaving room for floral hints to close with the classic almond note. This wine is enveloping and fresh on the palate, with an excellent correspondence between the aromas and the flavour and the long finish with an almond flavour.
FOOD PAIRINGS
Excellent as an aperitif, it goes well with fish, white meats, and cold cuts. Try it both with San Daniele raw ham and with potato Frico.
