THE WINE
The Gamay of the La Source winery is produced with 100% gamay grapes grown in the vineyard Collina di Aosta, owned by the winery, on a moraine and sandy soil.
THE WINEMAKING
The grape harvest is strictly manual and takes place in the first half of October; only the selected grapes are brought to the cellar for winemaking that begins with the de-stemming. The grapes ferment on the skins for 6-8 days at a controlled temperature of 28 ° C. After racking, both, the fermentation and the aging takes place in steel tanks. The wine ages for about 12 months. After bottling, it rests for other 6 months in the cellar before being placed on the market.
THE TASTING
Vibrant ruby red. The aroma is intense with pleasant notes of red fruit that alternate with light spicy hints. Fresh and intense on the palate. well balanced with good intensity. A ready-to-drink wine. Persistence is also good.
FOOD PAIRINGS
It goes well with red meat, hard cheeses but also cured meats. Must try with the classic pasta with bolognese sauce.
