THE WINE
The Ortrugo Doc Frizzante “Gli spaghi” by the winery Il Poggiarello is a sparkling white wine produced with 100% Ortrugo grapes; the cork closed with the traditional Piacenza string, is tied strictly by hand.
We are in Val Trebbia near Piacenza in Emilia Romagna; the winery was founded thanks to two families who have continued their philosophy for five generations; all grapes are certified organic and the wine production follows the dictates of tradition.
THE WINEMAKING
After the harvest, the selected grapes go to the cellar and are destemmed and softly pressed. The winemaking begins with the cryo-maceration of the skins; thanks to this process, the winery extracts all the most intense aromas and flavours of the grape itself. The must ferments in steel tanks at a controlled temperature of 16 ° C with the sole use of selected indigenous yeasts. Subsequently, the wine is moved to an autoclave for a slow second fermentation. After bottling and closing the cork with the traditional string, the wine rests for a few months in the cellar before being released onto the market.
THE TASTING
Straw yellow with greenish reflections. The aroma has pleasant notes of ripe peach and passion fruit intertwined with notes of elderberry and mint puffs. Fresh and pleasantly savoury on the palate, this Sparking Ortrugo Doc has an almost perfect correspondence between aromas and flavour and a long and pleasantly persistent finish.
FOOD PAIRINGS
Excellent with cold cuts and fish; try it with tuna tartare or with pizza.
