THE WINE
The Grigio of the Collavini winery is a blend of Chardonnay and Pinot Grigio grapes grown in the vineyards owned by the winery and located in Crono di Rosazzo in the province of Udine.
THE WINEMAKING
The harvest is strictly manual, and only the selected grapes are brought to the cellar. The winemaking is the classic white one with a very soft pressing of the grapes without maceration.
The following spring, the wine is moved to vertical autoclaves for re-fermentation. It remains on the lees for a period that varies between 5 and 6 months, at a constant temperature of 14 ° C. The wine is then bottled and left to rest for a few more months in the cellar before being placed on the market.
THE TASTING
Pale straw yellow with persistent foam and a fine and continuous perlage; the aroma is fresh with pleasant fruity notes of golden apple and pear, which alternate with hints of warm bread crust. Harmonious and round on the palate. Good correspondence between aromas and flavour. Persistence is also good.
FOOD PAIRINGS
Perfect for an aperitif, it goes well with fish. A must try with cured meats.
THE WINERY
The history of Collavini begins in Rivignano (Friuli Venezia Giulia), in 1896 with Eugenio, the founder, who was the wine supplier of the noble families of Udine and of the shops. The winery management passes from Eugenio to his son Giovanni, who has to drive the company through two wars but, at the end of which, thanks to the rapid acceleration of the commerce, succeeds in establishing the success of the winery thanks to the quality of its wines… go to the winery page
