The Wine
The Instante of the Franz Haas winery is a cuvée of Cabernet Sauvignon, Petit Verdot, with a small part of Merlot and Cabernet Franc. The vineyards are located at altitudes ranging between 250 and 500 meters above sea level and on mainly sandy soils.
The Haas family has been running this winery for seven generations, and over the years, it has become one of the flags of South Tyrol.
THE WINEMAKING
After manual harvesting, the selected grapes are taken to the cellar for winemaking. The must ferments in open tanks; this technique allows the must to come into contact with the skins thanks to frequent pumping over and punching down which are done up to four times a day for the entire duration of fermentation. This technique enables the colouring substances and aromas contained in the peel to transfer to the wine. The wine then ages for at least eighteen months in barrique, and after bottling, it rests for twelve months in the bottle before being placed on the market.
THE TASTING
Intense garnet red. The aroma is elegant, with pleasant notes of red fruits that alternate with hints of plums, figs and dates, which leave room for puffs of green tea and bark. These aromatic sensations accompany the wine throughout its long life and underline its depth. Perfectly structured on the palate, delicate, with complex, velvety and well-smooth tannins; the finish is also long and persistent.
FOOD PAIRINGS
It goes well with red meats, game but also with hard cheeses.
