THE WINE
The Jiasik Rosso of the Borgo San Daniele winery is produced with 100% Cabernet Sauvignon grapes grown in Giassico, a small village where the air still smells of Austro-Hungarian Empire. We are located in the municipality of Cormons in Friuli Venezia Giulia. Peculiarities of this wine; the winemaking follows the lunar phases and the presentation takes place every year on the first day of spring.
THE WINEMAKING
After manual harvesting, only the selected grapes are brought to the cellar. The bunches are de-stemmed and softly pressed. The must undergo a lowering of the temperature in an inert environment. The fermentation lasts 9-10 days. The wine ages in stainless steel and oak barrels of different sizes. After bottling, it rests for at least a month in the cellar before being placed on the market.
THE TASTING
Intense ruby red. The aroma is broad and elegant with light herbaceous hints that blend well with the aromas of red fruit. Fresh and aromatic on the palate with good body, it maintains the recognizability of the grape of origin, with the right degree of softness given by the full ripening of the bunch.
FOOD PAIRINGS
Excellent with red meat and aged cheeses but also with roasts.
THE WINERY
Borgo San Daniele is a winery made up of people, two in particular, the Alessandra and Mauro Mauri (brother and sister). As children, Alessandra and Mauro spent a lot of time with their grandparents. The grandparents were farmers and winemakers and owned a small company where everyone did a bit of everything. The time spent with the grandparents allowed Alessandra and Mauro to fall in love with farming and winemaking to the point that Alessandra undertook her studies as an agricultural expert and Mauro in oenology and viticulture… go to the winery page
