IL VINO
The Rajàh Zibibbo from the Tenuta Gorghi Tondi winery is made of 100% Zibibbo grapes grown in vineyards owned by the winery. We are near Mazara del Vallo in the westernmost part of Sicily, a stone’s throw from the sea and the sea breezes. The estate is located within a nature reserve protected by the WWF.
The winery is a family-run winery run by women, and since 2016 all vineyards have been certified organic, which means that all the wines are organic and carry the famous green leaf on the label. Both in the vineyard and in the cellar, there is the utmost respect for nature and its balance.
This wine was born to pay homage to Sicilian and Tunisian cultures that coexist well in Mazara del Vallo. The shell on the label represents the estate terroir, it is the calcareous part that gives the grapes and the wine a marked minerality.
THE WINEMAKING
After the grapes have been harvested, only the selected ones go to the winery for winemaking, which begins with a soft pressing. The must ferments in steel tanks at a controlled temperature. As for the refinement, the wine refines in steel tanks for about five months. After assembly and bottling, the wine rests for another five months in the cellar before being released onto the market.
THE TASTING
Straw yellow with greenish reflections. The aroma is fragrant with hints of citrus where mandarin and cedar prevail, alternating with floral notes of jasmine and orange blossom. Fresh and aromatic on the palate, Rajàh Zibibbo is an enveloping wine with an excellent correspondence between aromas and flavour and a long and persistent finish.
FOOD PAIRINGS
Rajah Zibibbo goes well with all fish, tasty cheeses and white meats. It loves spicy dishes. Try it with foie gras.
