THE WINE
The KK of the Kante agricultural company is the winery’s classic method sparkling wine produced with a blend of 50% Chardonnay grapes and the remaining 50% Malvasia grown in the vineyards owned by the winery in the Trieste Karst at an altitude of approximately 250 meters above sea level. Here, the land is red and rich in limestone rock, which allows excellent drainage. The label has two mirrored Ks, which signify respect for tradition with an eye for evolution. This classic method rests in a cave.
THE WINEMAKING
The harvest of the grapes is strictly manual, in boxes, and takes place only when the grapes have reached the desired level of ripeness. Once in the cellar, the grapes are wine made in white. The wine rests in barriques; once the right degree of refinement has been reached, it is bottled on the yeasts for sparkling wine production, resting for at least a year before disgorgement. This phase occurs in a cave where the winery owner has created a suitable microclimate to create a high-quality sparkling wine.
THE TASTING
Straw yellow with light copper reflections and a fine and persistent perlage; the aroma is elegant with pleasant fruity notes that alternate with floral hints to finish with scents of bread crust. It is very fresh and pleasantly mineral on the palate. A persistent sparking wine with an excellent correspondence between aromas and flavour.
FOOD PAIRINGS
Perfect as an aperitif, it goes well with fish, even raw. Try it with sushi and sashimi.
