The Champagne La Perle Des Treilles brut
The champagne la Perle des Treilles brut from the Yannick Prevoteau winery is for connoisseurs. It is for those who love champagne and are looking for goodies. This cuvée owes its name to the locality of the winery “Les Treilles”. A cuvéè for 60% Pinot noir and 40% chardonnay, made up only of reserve wines and, more precisely: 50% reserve wine from 2016, 25% 2015 reserve wine and 25% 2014 reserve wine.
We are located in Damery, in the Marne Valley department, in the heart of the Champagne region. The work on the ground and in the vineyard, combined with a production process that fully respects the environment, has allowed the winery to obtain HVE level 3 (High Environmental Value Vineyard) and VDC (Sustainable Viticulture in Champagne) certifications.
THE WINEMAKING
The grapes are harvested and wine-made in steel; the winemaking takes place without the malolactic fermentation. The wine is then bottled for the second fermentation and remains on the lees for 48 to 60 months and after disgorgement it rests for at least another 6 months. Dosage 9,5g/litre
Tasting the wine of the Yannick Prevoteau winery
The aroma is elegant and extremely fine, with notes of creamy brioche alternating with hints of white pepper. Mineral cents are also perceived. Closes with fruity puffs where pear and Muscat grapes prevail. Fresh and creamy on the palate, you feel like biting into ripe grapes. The finish is explosive with tantalizing acidity with fruity flavours of green apple and pear. As it warms up, woody and vanilla and caramel notes are savoury. The persistence is very long too.
FOOD PAIRINGS
Due to its freshness it is perfect throughout the meal if the menu is based on fish or white meat.
