THE WINE
The Veronica from Paolo Caccese’s winery is a sweet wine that comes from Malvasia Istriana and Verduzzo Friulano grapes, grown in the estate’s vineyards in the town of Pradis in the province of Cormons in the heart of the Collio DOC. The soil rich in fragmented marl and sandstone that time has enriched with salts, and the protection of the Alps, which allow a climate with a significant temperature range, make this area a unique place for vine growing.
THE WINEMAKING
The grapes of both grape varieties are harvested when they are sub-ripe. After fermentation, the wine is blended and left to rest for about three years in French oak barriques. After bottling, the wine rests for a few months in the cellar before being placed on the market.
THE TASTING
Intense yellow with golden reflections. The aroma is fresh with pleasant hints of honey that intertwine with notes of acacia to close with puffs of dried fruit. Soft on the palate, this is certainly a sweet but not cloying wine with a pleasant savoury note and long persistence.
FOOD PAIRINGS
This is a dessert wine; it goes well with dried fruit desserts but also blue cheeses and fois gras. Also excellent as a meditation wine.
