The Malvasia Donna allo specchio (woman at the mirror) of the Soffio sulle Isole winery is produced with 100% Malvasia grapes grown on the island of Vulcano, one of the seven islands that form the Aeolian archipelago in Sicily. Although the island is of volcanic origin, the vineyards are located in a very fertile territory in the “Piano” area, a real plain, 420 meters above sea level.

THE WINEMAKING

After the manual harvest which takes place in the first half of September, only the selected grapes are brought to the cellar for winemaking. The bunches are first de-stemmed and then gently pressed. The must obtained ferments in steel at a controlled temperature. After bottling, the wine rests in the cellar for at least three months before being placed on the market.

Bright straw yellow with golden reflections. The aroma is fine and elegant with pleasant notes of wild flowers and chamomile that intertwine with fruity hints of yellow peach and pineapple to close with light scents of white pepper. Fresh and savory on the palate, it is an easy to drink wine, with a good balance and a pleasant persistence.

FOOD PAIRINGS

It goes well with fish, white meats but also soft cheeses. Must try with grilled fish.
