The wine Malvasia Istriana Chioma Integrale from the Vignai da Duline winery
The Istrian Malvasia from the Vignai da Duline winery is produced with Istrian Malvasia grapes and has been called “Chioma integrale” which in english literally translates as “full hair” because of the technique of not trimming the plant in the vineyard. This technique allows the plant to self-regulate by finding its perfect balance in every vintage.
THE WINEMAKING
The harvest which is strictly manual takes place in the second half of September. Once in the cellar, the selected grapes are destemmed and softly pressed. The must is then left to ferment in French oak barrels with the sole use of indigenous yeasts. The wine ages for about 8 months in barriques and oak barrels. Follows the assembly and a light filtering before bottling.
Tasting the “Chioma Integrale”
Bright straw yellow. The aroma is intense with lime hints that intertwine with notes of fresh fruit to make room for pleasant sensations of aromatic herbs such as sage and thyme. Dynamic and juicy on the palate with a good flavor and a long and persistent finish.
FOOD PAIRINGS
It goes well with fish, eggs and soft cheeses. Must try with fried fish.
