THE WINE
The Malvasia of the Kante farm is produced with 100% Malvasia grapes grown in the vineyards owned by the winery in the Trieste Karst at an altitude of approximately 250 meters above sea level. Here, the land is red and rich in limestone rock, which allows excellent drainage. Kante has been producing this wine for nineteen years, and it is one of its flagships.
THE WINEMAKING
The harvest of the grapes is strictly manual, in boxes, and takes place only when the grapes have reached the desired level of ripeness. Once in the cellar, the grapes are wine made in white. The wine then ages for approximately twelve months in old, exhausted French oak barriques and then for over a year in stainless steel tanks. After blending and bottling, the wine rests in the cellar for a few more months before being released onto the market.
THE TASTING
Intense and crystalline golden yellow. The aroma is pleasant and intense, with delightful notes of yellow fruit such as rennet apple, leaving room for hints of dried fruit to finish with puffs of eucalyptus honey and resin. Fresh and tasty on the palate, it is a balsamic wine with a marked acid note, excellent correspondence between aromas and flavour, and long persistence.
FOOD PAIRINGS
It goes well with fish, white meat, medium-aged cheeses and vegetables. Try it with the omelette.
