THE WINE
The rosè Champagne Method Brut Maria Elisa from the Angelo Negro winery is produced with 100% nebbiolo grapes grown in the vineyards owned by the winery that are located in Roero. We are in the province of Cuneo in Piedmont, in a land particularly suited to the cultivation of wine. We are at an altitude ranging arownd 280 and 320 meters above sea level; here the soil is calcareous and sandy.
The grape harvest, which is strictly manual, takes place between the end of August and the beginning of September. The selected grapes are placed in boxes of about 20 kg and taken to the cellar. The winemaking takes place in steel at a controlled temperature. The wine then ages in steel for about 6 months. Follows the bottling for the second fermentation; the wine then rests on the lees for 60 months.
Pinkish tending to onion skin with a fine and persistent perlage. The aroma is fresh and fragrant with pleasant hints of red fruits. Very fresh and elegant even on the palate, it carries the varietal characteristics of Nebbiolo, that is the fruit flavors and spicy notes. The acidity is also excellent with a broad and enveloping aftertaste that closes with peppery notes.
Perfect as an aperitif, must try with fish but also with mixed cold cuts.
