THE WINE
The Marinà Bio from the San Luris winery is a wine produced with 100% Malvasia grapes, and is the outcome of a marriage between the family’s historic vineyards and a traditional enology. We are talking about a modern sparkling wine with a particularity; the refermentation takes place in bottle, as for the great sparkling wines, but the disgorgement is not done. This means that neither sugars nor the classic liqueur de tirage are added and the yeasts get consumed in the bottle.
The winery has chosen to use the crown cap instead of the classic mushroom cork so that the consumer can find a constantly evolving bubble. The evolution is guaranteed thanks to the crown cap and the presence of the refermentation lees that give freshness, richness and longevity to the wine.
THE WINEMAKING
The harvest is strictly manual and is done slightly earlier than the optimal harvest period, in order to ensure the right freshness to the wine. The harvested grapes are placed in boxes and selected directly in the vineyard. Once in the cellar, the whole grapes are softly pressed; and only the first pressing juice (about 50% of the juice obtained) is used for the production of this wine. The must is cold decanted for about 12-15 hours, followed by fermentation at a controlled temperature of 16-18 ° C. The wine then refines on the fine lees which are periodically kept in suspension until the following spring, when it is bottled. The bottles rest in the cellar for 12-15 months before being placed on the market.
THE TASTING
Greenish yellow, this wine is not crystalline because of the presence of the suspended yeasts. The aroma is fresh and delicate with pleasant hints of white-fleshed fruit that alternate well with notes of yeast and constant scents of salt. Fresh on the palate with a pleasant sparkling sensation. Very well balanced, sapid and persistent.
FOOD PAIRINGS
Perfect as an aperitif, it goes well with fish and shellfish, even raw, but also with white meat and medium hard cheeses.
