THE WINE
LH2 Champagne Method Sparking Wine Extra Brut from the Umani Ronchi winery is the outcome of many experiments; in order to reach the desired level, the winery worked for several years with different grape varieties and created different blends.
LH2 is a cuvée of Verdicchio and Chardonnay grapes that mature in steel and wood and are refined in the bottle for a period ranging between twenty-five and thirty months. A fresh, savoury and creamy wine perfect for all important toasts.
THE WINEMAKING
The harvest is strictly manual; the Chardonnay starts at the beginning of August and, the Verdicchio, at the end of August. Once in the cellar the grapes are softly pressed and the must is immediately cooled and then left to decant statically. The Chardonnay ferments in steel tanks and then refines for a few months in small wooden barrels. The Verdicchio ferments and refines in steel. After the creation of the cuvée with the base wines that can be from different vintages, it is bottled with the yeasts for the second fermentation; the wine ages in the bottle for a period ranging from twenty-five to thirty months.
THE TASTING
Straw yellow, the perlage is fine and persistent; the aroma is elegant with delicate floral notes that alternate with fruity hints, mandarin and puffs of bergamot to close with scents of warm bread crust. Savoury and creamy on the palate, the LH2 Champagne Method Sparking Wine Extra Brut has a nice salty note and a long and persistent finish that recalls the citrus notes of mandarin.
