THE WINE
The Merlo Corvina from the Santa Sofia winery is a wine that comes from a blend of Merlot and Corvina grapes, just as its name suggests, grown in the vineyards owned by the winery, located in the hilly areas in the province of Verona, where the land is mainly of calcareous origin.
THE WINEMAKING
After manual harvesting, the selected grapes are taken to the cellar for winemaking. After destemming and soft pressing, the grapes macerate in stainless steel for approximately seven to nine days. Regarding refinement, the wine rests for at least three months in steel, and after blending and bottling, the wine rests for another three months in the cellar before being placed on the market.
THE TASTING
Clear and brilliant ruby red. The aroma is vinous with pleasant hints of flowers that intertwine with notes of red fruits such as raspberries and black cherries in alcohol, which leave room for spicy puffs where liquorice and tobacco prevail. Fresh and crunchy on the palate with an excellent tannic structure. The finish is pleasantly long and persistent.
FOOD PAIRINGS
Perfect with roasts and medium-aged cheeses. Try it with the fillet with green pepper.
