THE WINE
The Merlot Dal Pic from the Collavini winery is 100% Merlot, grown in the winery’s vineyards in San Floriano del Collio, in the heart of the DOC Collio in Friuli Venezia Giulia.
The name “Dal Pic” is a Friulian term that identifies the highest part of the hill, that is, the best-exposed area where the grapes reach full ripeness. The peculiarity of this merlot is that once harvested, the grapes are left for a period in the fruit cellar to concentrate the aromas and flavours that we find in the glass.
THE WINEMAKING
The manual harvest takes place in the first fifteen days of October. The harvested grapes are placed in drying trays and left to rest in a cellar at a controlled temperature and humidity. This step enhances the aroma and the body of the wine. The winemaking begins with a maceration lasting about twenty days. The fermentation takes place in steel tanks. The wine refines in Allier and Tronçais barriques for at least twenty-four months. After assembly and bottling, the wine ages in the cellar for another two years before being released onto the market.
THE TASTING
Intense ruby red with purple reflections; the aroma is complex with pleasant hints of wild berries that alternate with spicy notes to close with puffs of liquorice. Warm and soft on the palate. This Merlot Dal Pic is a great wine with silky and well-polished tannins and a perfect correspondence between aromas and flavour. The finish is long and persistent.
FOOD PAIRINGS
Excellent with red meat and game. Try it with aged cheeses, even goat cheese.
