The wine Merlot in Volo by Rodaro winery
This Merlot In Volo Sul from the Rodaro winery is part of the “In Volo Sul” line or the wines of the plain. Climate change has made the family consider the excellent qualitative potential of the flat land, with its long sunny summer days and the cool, moderate winds that blow from the Adriatic. The soil here is characterized by gravel and a sizeable stony surface which enhances the temperature range between day and night, thus favouring grapes with a marked endowment of aromas and aromatic and elegant wines.
Respect for the environment and the work done in the vineyard with a view to sustainability, together with the low production per hectare, enhance the quality and refinement of the production of plain wines, giving a unique character to this line of wines.
THE WINEMAKING
Once in the cellar after harvesting, the grapes are destemmed and softly pressed. Fermentation takes place at a controlled temperature in stainless steel tanks. The wine then ages on the lees in French oak barrels for a period ranging between 7 and 12 months. After blending and bottling, the wine rests for a few months in the cellar before being placed on the market.
Tasting the Merlot by Rodaro
Intense ruby red. The aroma perceives pleasant fruity notes of cherry and red fruits, which alternate with hints of aromatic herbs to close with mineral puffs. Soft and fresh on the palate. The tannin is present but well-integrated. Good correspondence between aromas and flavour.
FOOD PAIRINGS
It goes well with cold cuts and medium hard cheeses.

The winery expanded when his son Paolo joined the enterprise and led the company. Today, Rodaro is one of the most dynamic wineries in the Friuli region… keep reading
