The sparkling wine champagne method by the winery Altemasi
The brut classic method sparkling wine from the Altemasi winery is produced with a selection of Chardonnay grapes from the vineyards owned by the winery. We are in Trentino in the Valle dei Laghi, between the hills of Trento and the Brentonico plateau; the vineyards are at an altitude between 450 and 700 meters above sea level. The mild climate, the protection of the mountains, and the important temperature variations between day and night allow the grapes to ripen perfectly and maintain the right acid note which then transforms into freshness in the glass.
This classic method is the winery’s flagship, with its freshness and elegance it is perfect for all occasions.
THE WINEMAKING
The harvest is strictly manual and the grapes are collected in boxes. Once in the cellar, the winemaking in white begins with destemming and soft pressing. The fermentation takes place partly in steel and partly in used barriques. In the spring following the harvest, the wine is assembled, bottled with the yeasts for secondary fermentation, and left to rest for more than 30 months. The “liqueur d’expedition” is added to the disgorgement in a minimal dose and left to rest for a few more months before being placed on the market.
Tasting the sparking wine by the Altemasi winery
Straw yellow with greenish nuances and a fine and persistent perlage; the aroma is intense with pleasant fruit notes among which white peach and apple prevail, leaving room for fresh citrus puffs to finish with hints of brioches. Fresh and savory on the palate, perfectly balanced with a pleasant correspondence between aromas and flavor. Persistence is also excellent.

Perfect as an aperitif, it goes well with fish and shellfish, even raw. Try it with seafood risotto.
