The Wine
The Michei Trento DOC from the Hofstatter winery is Chardonnay grapes from the vineyards of the Maso Michei estate, located at the end of the Ronchi Valley above the town of Ala. Hofstatter acquired this estate at 850 meters above sea level because they wanted a unique classic method sparkling wine. Maso Michei is an extraordinary place, where viticulture is heroic, the vine grows slowly and the grapes ripen late.
THE WINEMAKING
After the manual harvest occurs between the end of August and the beginning of September, the selected grapes are taken to the cellar for winemaking. The grapes are destemmed, softly pressed and the must is left to settle for the whole night. Fermentation takes place in steel tanks at a controlled temperature. In the spring following the harvest, the wine is bottled on the lees for the second fermentation and rests for at least 48 months.
THE TASTING
Straw yellow with a fine and persistent perlage. The aroma is pleasant with fruity notes that alternate with hints of bread crust to close with vanilla puffs. Fresh and savory on the palate, with a good body and a perfect correspondence between the aromas and flavor. Good persistence too.
FOOD PAIRINGS
Perfect as an aperitif, it pairs well with fish, white meats and, shellfish. Try it with grilled fish.
