Winemaking
The winemaking of Monte Rossa Brut Cabochon Fuoriserie N° 025 follows the classic method, also known as méthode champenoise. After hand harvesting, the grapes are gently pressed to extract the must, which ferments in 250-litre oak barrels. After creating the cuvée with the addition of 20% of reserve wines, the base wine is bottled with sugar and yeasts to initiate the secondary fermentation, which occurs in the bottle. This process is followed by ageing on the lees for at least 36 months, giving the wine its finesse and perlage.
Tasting Monte Rossa Wine
It has a bright golden yellow colour with greenish reflections and a fine, persistent perlage; the aroma offers a complex and fruity bouquet, with notes of white flowers giving way to fruity hints of apricot, finishing with wafts of thyme, cedar, and saffron.
