The wine Montecucco DOCG from Ambrogio e Giovanni Folonari winery
The Montecucco DOCG from Ambrogio and Giovanni Folonari winery is produced with Sangiovese grapes that come from the Vigne a Porrona estate, located in the Maremma region. This estate spans 25 hectares and produces high-quality grapes. Situated at 350 meters above sea level, it also cultivates international grape varieties such as Merlot, Cabernet Sauvignon, and Syrah alongside the Sangiovese vineyards.
THE WINEMAKING
After the manual harvest, the selected grapes are promptly taken to the cellar for winemaking. This process begins with a maceration on the skin lasting about four weeks. Fermentation takes place in steel at a controlled temperature. The wine ages for about twenty-four months in French oak tonneaux and after assembly and bottling, the wine rests for at least six more months in the cellar before being released onto the market.
Tasting the wine
Ruby-red colour, the aromas are filled with hints of red fruits, notably ripe cherries and raspberries; alongside these fruity notes, there are delicate floral hints, as well as undertones of leather, cocoa, and sweet spices. It is warm and dry on the palate, showcasing a good body that corresponds well with the aromas; the tannins are noticeable but well-rounded, and the finish is long and pleasantly persistent.

Montecucco DOCG is an excellent pairing with red meats, game, and aged cheeses. Consider trying it with venison fillet.
