THE WINE
The Moscato d’Asti DOCG from the Paolo Saracco winery is produced with 100% moscato d’asti grapes grown in the vineyards owned by the winery; vineyards that are located in the best areas of Castiglione Tinella, Santo Stefano Belbo, Castagnole Lanze and Calosso where the soil is rich in sand, limestone and silt.
THE WINEMAKING
After manual harvesting, the selected grapes are taken to the cellar for winemaking. The grapes are softly pressed; the free run must is moved to steel tanks at a temperature of -2 ° C. After fermentation at a controlled temperature, the wine is microfiltered and bottled. By doing so, the freshness and aromaticity of the wine are preserved.
THE TASTING
Straw yellow with greenish reflections, the perlage is fine thanks to a slow fermentation. The aroma is intense with pleasant fruity notes of peach and orange blossom that alternate with hints of aromatic herbs. Elegant on the palate, well balanced sweet with a good correspondence between aromas and flavor. The persistence is also excellent.
FOOD PAIRINGS
Sweet wine, it goes well with tarts but also with dry pastries. Perfect with Christmas desserts, must try with panettone.
