THE WINE
The Negroamaro Monte dei Cocci from the Tenute Girolamo winery is produced with 100% Negroamaro grapes grown in its vineyards owned by the winery that are located in Valle d’Itria, 450 meters above sea level, a characteristic area also for the red color of the soil.
THE WINEMAKING
After manual harvesting, only the selected grapes are brought to the cellar for winemaking which begins with a quick maceration and soft squeezing. Fermentation takes place in French oak vats. The wine is then moved to French oak barrels where it ages for a period ranging from 4 to 6 months. After assembly and bottling, the wine rests for a further 6 months in the cellar before being placed on the market.
THE TASTING
Ruby red with garnet reflections. The aroma is very pleasant with fruity notes of orange peel, plum and mandarin that alternate with spicy tones of pepper and cinnamon. Warm and enveloping on the palate; a well balanced wine with well-smoothed tannins and a long persistence.
FOOD PAIRINGS
It goes well with red meats and hard cheeses but also with cold cuts. Must try with the typical dishes of the Apulian culture.
