The wine Morellino di Scansano from Ambrogio e Giovanni Folonari winery
The Morellino di Scansano from Ambrogio and Giovanni Folonari winery is produced with Sangiovese grapes that come from the Vigne a Porrona estate, located in the Maremma region. This estate spans 25 hectares and produces high-quality grapes. Situated at 350 meters above sea level, it also cultivates international grape varieties such as Merlot, Cabernet Sauvignon, and Syrah alongside the Sangiovese vineyards.
THE WINEMAKING
After the manual harvest, the selected grapes are promptly taken to the cellar for winemaking. This process begins with a maceration on the skin lasting about twelve days. Fermentation takes place in steel at a controlled temperature. The wine ages for about seven months in steel tanks and after assembly and bottling, the wine rests for at least three more months in the cellar before being released onto the market.
Tasting the wine
The wine is a bright ruby red colour and has a pleasant aroma with fruity hints of ripe cherries, complemented by notes of blackberries and blueberries. There are also subtle hints of cocoa, leading to a spicy finish where cinnamon and cloves are prominent. It is warm and dry on the palate, displaying a rich body and a good balance between its aromas and flavours. The finish is long and persistent.
FOOD PAIRINGS
Morellino di Scansano complements red meats and aged cheeses. Consider pairing it with baked pork shank.
