THE WINE
The Noblesse from the Benanti winery is the first and probably the only sparkling wine made from 100% Carricante grapes. It is a native Sicilian white grape that grows mainly on the land around the Etna volcano; we are about 800 meters above sea level. All the vineyards are owned by the winery.
The Benanti winery has chosen to grow only native vines, with a team of women and men from the area. For over thirty years, the winery has followed organic practices, using only indigenous yeasts selected by them in the vineyard to preserve the link between the wine and the territory of origin.
THE WINEMAKING
After manual harvesting, the selected grapes are taken to the cellar where the whole bunches are softly pressed. Fermentation occurs in steel tanks at a controlled temperature between 16 and 18 ° C. The wine ages on its lees until the end of the spring following the harvest when it is bottled for the sparkling phase and left to rest on the lees for at least 24 months. After disgorgement, the wine rests for at least three more months in the cellar before being released onto the market.
THE TASTING
Light straw yellow with greenish reflections and a fine and persistent perlage; the aroma is pleasantly intense with citrus scents that leave room for notes of orange blossom to finish with mineral hints. Dry and mineral on the palate with a pleasant acidic note and a good correspondence between aromas and flavor. The persistence is also excellent.

The Noblesse from the Benanti winery is perfect for the whole meal if the menu is fish-based. Try it with fried foods.
