Cuvée de Prestige Pas Dosè from Piè di Mont winery
The sparkling wine Cuvée de Prestige Pas Dosè from Piè di Mont winery is a cuvée of 60% Chardonnay, 20% Pinot Noir, and the remaining 20% Ribolla Gialla. The vineyard, located in Piedimonte in the municipality of Gorizia, grows on marly and shallow soils at 100 meters above sea level.
Located at the foot of Mount Calvario, with a Southeast orientation, the vineyard enjoys a wide temperature range thanks to the sun, which sets behind the mountain in the early hours of the afternoon. This temperature difference helps give the sparkling wine a more intense character and well-balanced acidity.
The Winemaking
At the beginning of September, the harvest is carried out entirely by hand, using crates. This operation takes place exclusively during the cooler hours of the day to preserve the integrity and optimal temperature of the grapes. The grapes are vinified separately in steel tanks through gentle pressing; only 5% of the Chardonnay ages in new 225-litre barrels. The cuvée is blended in January, while fermentation occurs in May. The period of ageing on the lees begins at 69 months. After disgorgement, the bottles undergo an additional 12 months of ageing in the winery.
Tasting the Piè di Mont wine
It has a straw-yellow colour with fine and persistent bubbles. The aromas start with mineral notes that give way to flowers, ripe fruits, and citrus scents, evolving into more complex puffs of white chocolate and sweet spices. It is fresh and well-structured on the palate, with a nearly perfect correspondence between aromas and flavour. The finish is persistent, amplifying the mineral and fruity sensations.
FOOD PAIRINGS
It is perfect as an aperitif or paired with fish dishes, shellfish, and seafood, thanks to its freshness and vivacity; it also pairs well with light appetizers, such as tuna tartare or carpaccio, and grilled vegetable dishes; additionally, it can be served with fresh and aged cheeses, creating an interesting contrast between the creaminess of the cheese and the freshness of the wine. Finally, it is an excellent companion for truffles and foie gras.
THE WINERY
The winery was founded in 1983 by Paolo Rizzi but at that time he did not produce wine but planted the vine cuttings by hand on the steep hills of this area of the Collio Friulano.
