THE WINE
The Cabernet Franc of the Sara & Sara winery is produced with 100% Cabernet Franc grapes grown in the vineyards owned by the winery and located in Savorgnano in Torre in the province of Udine. We are about 180-350 meters above sea level, and here the hilly terrain is rich in marl and sandstone.
The winery is organic, from the vineyard to the cellar. There is no use of herbicides, only the mowing of the grass, and for the defence of the territory, only natural methods are practised.
There are no clarifications or stabilizers in the wines. The winery uses only natural decanting, and some wines are not even filtered.
Of this wine, 2800 bottles are produced every year.
THE WINEMAKING
The grapes are harvested by hand, and once in the cellar, they are pressed and left to macerate in large oak vats for about 20 days at a natural temperature with only the help of selected yeasts. Frequent pumping over guarantees the extraction of colour and helps the fermentation to unfold. The wine ages for ten months in oak barrels in contact with fermentation yeasts. After bottling, the wine rests for four months in the cellar before being placed on the market.
THE TASTING
Intense ruby red. The aroma is fresh, with pleasant floral hints that intertwine with herbaceous notes. Soft, full-bodied and intense on the palate, with good correspondence between aromas and flavour and excellent persistence.
FOOD PAIRINGS
It goes well with red meats and game, but also with hard cheeses. A must try with the barbecue.
