THE WINE
The Sauvignon of the Sara & Sara winery is produced with 100% Sauvignon grapes grown in the vineyards owned by the winery and located in Savorgnano in Torre in the province of Udine. We are about 180-350 meters above sea level, and here the hilly terrain is rich in marl and sandstone.
The winery is organic, from the vineyard to the cellar. There is no use of herbicides, only the mowing of the grass, and for the defence of the territory, only natural methods are practised.
There are no clarifications or stabilizers in the wines. The winery uses only natural decanting, and some wines are not even filtered.
Of this wine, 2000 bottles are produced every year.
THE WINEMAKING
The grapes are harvested by hand, and once in the cellar, the winemaking starts with a soft pressing of the whole grapes followed by static decantation at 8 ° C, which lasts about 24 hours. Fermentation takes place at a controlled temperature using only the grapes’ natural yeasts to keep the olfactory heritage of the grapes intact. The wine ages for ten months in stainless steel tanks in contact with fermentation yeasts which are periodically held in suspension. After bottling, the wine rests for four months in the cellar before being placed on the market.
THE TASTING
Straw yellow. The aroma is intense, with pleasant hints of ripe fruit such as melon alternating with notes of sage and elderflower. Dry and enveloping on the palate with a long and excellent aromatic persistence.
FOOD PAIRINGS
Excellent with fish and soft cheeses. A must try with seafood and shellfish.
