The Rum Panama 21 Years Decanter Black is an ancient rum; a rum from the tradition of the Cuban masters who brought their art to Panama. Produced with sugar cane molasses, it is distilled in a column still and aged in American oak barrels for 21 years. The Nation project is an idea of the winemaker Fabio Rossi, who loves to select different Caribbean Rum barrels and then personally takes care of both the refinement and the bottling.
Dark amber, almost orange. The aroma is deep and elegant. Rich in raisins and tropical fruit. The character of brown cane sugar is evident. There is also a clear hint of wood, then dates and tobacco. On the palate it is rich, sweet and honeyed, with notes of dried figs and dates but also cinnamon, pepper, black tea and coffee. The sweet profile is balanced by hints of cloves, pepper and medicinal herbs and is certainly very intense.
As for the aftertaste, the higher alcohol content compared to the younger versions makes it warmer and spicier, with the tannins of the barrels compensating for the residual sweetness.
