THE WINE
This pas dosè classic method sparkling wine from the I Sabbioni winery is undoubtedly different from the classic methods we know; in fact, it comes from 100% Sangiovese grapes wine made in white. Sangiovese plants that are grown on sandy soils. We are near Forli in Emilia Romagna; the winery made a particular choice and decided to switch to organic cultivation. The trial began in 2018.
THE WINEMAKING
After the manual harvest, only the selected grapes are taken to the cellar. The winemaking begins with an immediate soft pressing of the grapes and vinification in white; the wine then ages for eight months in steel tanks on the fine lees. At the end of this period, it’s time for the second fermentation. The wine is bottled with the lees, where it remains for a period ranging between 24 and 36 months. There are no added sugars.
THE TASTING
Straw yellow with a fine and persistent perlage; about the aromas, as soon as the bottle is opened, the scent of mother yeast is immediately perceived, and after a few minutes, the salty notes begin to emerge in the glass. Creamy and elegant on the palate, very fresh; the tannins are persuasive and silky. Excellent persistence.
FOOD PAIRINGS
Excellent as an aperitif, you can drink it throughout the meal with simple fish or white meat dishes.
