THE WINE
The Franciacorta Pas Dosé Riserva 33 of the Ferghettina winery is a “blending of blending” the base wine before the second fermentation in the bottle, is composed of 33% each of the saten, milledi and extra brut bases. In this extraordinary wine, there are about 40 different parcels located in 8 municipalities of Franciacorta.
THE WINEMAKING
The strictly manual harvest takes place towards the middle of August and only the selected grapes are brought to the cellar for winemaking. The whole grapes are gently pressed. During the winemaking only the free-run must, which has the best qualitative characteristics, is used for the production of the Franciacorta; the second pressing must is not intended for bottling. The fermentation is carried out in steel tanks at a controlled temperature that varies between 16 and 18 ° C. The base wine rests in the steel tanks until the spring following the harvest when it is bottled for the second fermentation. The wine then ages on the lees for 84 months.
THE TASTING
Deep golden yellow with a fine and persistent perlage; the aroma is elegant with pleasant notes of ripe fruit such as apricot and yellow-fleshed peach that leaves room for hints of candied fruit and floral scents. Fresh and harmonious on the palate, delicate and persuasive with a perfect correspondence between aromas and flavour. Excellent persistence.
FOOD PAIRINGS
Perfect with both cooked and raw fish and with soft cheeses. A must try with a fish soup.
