The wine Passito by Soffio sulle Isole winery
The Passito Respiro primordiale of the Soffio sulle Isole winery is produced with 100% Malvasi grapes grown on the island of Vulcano, one of the seven islands that form the Aeolian archipelago in Sicily. Although the island is of volcanic origin, the vineyards are located in a very fertile territory in the “Piano” area, a real plain, 420 meters above sea level.
THE WINEMAKING
After the manual harvest in the second half of August, the selected grapes are laid out in the sun on racks to dry for about 20 – 25 days. The dried grapes are then destemmed and softly pressed. The pressed grapes are left to macerate at a controlled temperature of 15-16° until the fermentation ends spontaneously. After racking, the wine ages in barriques for six to eight months, and after assembly and bottling, it rests in the cellar for a few months before being released on the market.

Intense golden yellow with amber reflections; the aroma is aromatic with pleasant floral notes that alternate with fruity scents that leave room for hints of acacia honey, vanilla, and dried and candied fruit. Sweet but not cloying and warm on the palate, this Passito is very well balanced with a perfect correspondence between perfumes and aromas and a long and persistent finish.
FOOD PAIRINGS
This Passito is a typical dessert wine but also a meditation wine. It is ideal with dry biscuits; it goes well with fruit, ice cream, and small pastries.
