THE WINE
The Maximo IGT from the Umani Ronchi winery is a unique wine produced with Chardonnay Blanc grapes. The vineyards are in the highest part of the Villa Bianchi estate at about 150 meters above sea level. Here, the climatic conditions that alternate high humility and windy and dry moments cause the grapes to be attacked by Botrytis Cinerea in its most noble form. This noble rot gives the wine unique and complex aromas and flavours.
THE WINEMAKING
The harvest is strictly manual in crates, it begins in October and continues until December because there are several passages in the vineyard. The harvest requires that only the grapes that have reached the right degree of ripeness and attack of noble rot are picked. It sometimes happens that the same bunch is harvested several times. Once in the cellar, the grapes are softly pressed with a small press dedicated to this label. The must decants statically and ferments in stainless steel tanks with Indigenous yeasts at a controlled temperature of 15°C for a month. Maximo IGT ages in small steel containers for about a year, and after assembly and bottling, it rests for a few more months in the cellar before being released onto the market.
THE TASTING
Bright gold with amber reflections. The aroma is elegant; pleasant notes of honey alternate with fruity hints of peach and apricot to continue with scents of ripe fig and close with puffs of citrus and candied fruit. Fresh and rich on the palate, Maximo IGT is a sweet but not cloying wine with a marked acidity that encourages drinking. The correspondence between the aromas and the flavour is perfect. The finish is very long and persistent.
FOOD PAIRINGS
Maximo IGT is the perfect meditation wine but is also excellent at the end of a meal with dry desserts. Try it with blue cheese.
