THE WINE
The Picolit of the Butussi winery comes from Picolit grapes grown in the property’s vineyards. We are between Rosazzo hill and the Gramogliano hill in Friuli Venezia Giulia. This area has been considered among the most suitable for Friulian viticulture for over two thousand years.
Picolit is a rare and legendary “passito” wine, capable of enveloping you in a warm and sweet embrace. We are talking about one of the greatest expressions of Friulian wine craftsmanship.
THE WINEMAKING
The grapes are manually harvested during October only when they have reached the perfect level of ripeness. Once harvested, the grapes are dried for over a month until they lose 40% of their weight. The winemaking begins with pressing using a traditional press. The must obtained ferments in 700-liter Slavonian oak barrels. The wine remains in the same barrels until the following autumn. The wine is moved to steel tunks in winter, remaining until spring. Bottling takes place following the lunar calendar, always during the week following Easter. The wine then ages in the bottle for twenty-four months before being placed on the market.
THE TASTING
Deep golden colour. The aroma is delicate and intense, with hints of sultanas and dates that alternate with notes of apricots, continuing with hints of honey and ending with puffs of aromatic herbs. Sweet and velvety on the palate, this Picolit from the Butussi winery is perfectly balanced with a relatively high alcohol content, a pleasant freshness and an excellent savoury note. The finish is very long and persistent.
FOOD PAIRINGS
It goes well with blue cheeses and desserts, but we recommend it as a meditation wine thanks to its quality. Try it with foie gras.
