THE WINE
The Pignacolusse of the Jerman winery is produced with 100% Pignolo grapes; its name recalls the shape of the bunch of Pignolo grapes which resembles a pine cone. Pignolo is an excellent native red wine of Friuli Venezia Giulia, and the Jerman winery with this version wants to pay homage to the one that in the thirties was presented as “a singular type of luxury wine.”
THE WINEMAKING
The harvest is strictly manual and occurs in the first days of September, and only the selected grapes are taken to the cellar for winemaking. This wine requires an extended maceration on the skins, lasting up to two weeks, followed by ageing in oak barrels ranging from twenty-four to thirty months. After blending and bottling, the wine rests in the cellar for a few more months and is placed on the market about three years after the harvest.
THE TASTING
Intense ruby red. The aroma is delightful, with delicate fruity scents where dry prune prevails, leaving room for coffee and cocoa notes. Robust and well-balanced on the palate, this Pignacolusse is well structured with present but silky and well-smoothed tannins and long persistence.

Perfect with red meats, game and aged cheeses. Try it with the classic pasta with bolognese sauce.
