THE WINE
The Pignolo from the Zof farm comes from 100% Pignolo grapes from the vineyards owned by the winery. We are in Corno di Rosazzo in the Colli Orientali del Friuli, a small area with a great wine tradition known worldwide. In Corno di Rosazzo, the climate, exposure, and the soil are fundamental factors for excellent wine production.
This native vine gives life to a noble, well-structured, and elegant wine forgotten for many years; back in vogue in the 80s, in 1995, it was recognized by the DOC Colli Orientali del Friuli.
A family-run business for four generations with fifteen hectares of vineyards equally divided between white wines and red wines with native and non-native grapes. Zof has also boasted the collaboration of Donato Lanati for over ten years, the oenologist-scientist known throughout the wine world for his qualities and philosophy.
THE WINEMAKING
The harvest takes place at the beginning of October. Once in the cellar, the grapes macerate in wooden vats for a period ranging from twelve to twenty days, depending on the vintage. Fermentation takes place in French oak barrels. The wine ages for approximately thirty-six months in barriques and tonneaus and, after bottling, which takes place between June and July, it rests for another six months in the cellar before being placed on the market.
THE TASTING
Intense ruby red, the aroma is intense with pleasant hints of red fruit where black cherry and blackberry prevail, leaving room for spicy hints of nutmeg, black pepper, and cloves, ending with puffs of resin and wood burnt. Full-bodied and well-balanced on the palate with intense but well-smoothed and integrated tannins and a good correspondence between aromas and flavor. Persistence is also good.
FOOD PAIRINGS
Excellent with red meat, this Pignolo from the Zof winery goes well with game and hard cheeses. Try it with spicy cold cuts.
