THE WINE
The Pinot Bianco of the Di Gaspero winery is produced with 100% Pinot Bianco grapes grown in vineyards owned by the winery. We are in Dolegnano, a small hill town in the heart of the DOC Colli Orientali del Friuli, located in the province of Udine. This area is known worldwide for the quality of the wines produced. This Pinot Bianco is a perfect example of this quality.
THE WINEMAKING
The harvest occurs in the first ten days of September, and only the selected bunches are taken to the cellar for winemaking. The grape is separated from the stalk and pressed sufficiently. The must is immediately cooled to a temperature of 10°-12° C. At this point, the flower must is separated from the less noble parts and left to ferment in steel at 17° C; the wine ages in steel for a period that varies according to the vintage. After blending and bottling, the wine rests for a period in the cellar before being placed on the market.
THE TASTING
Straw yellow with greenish reflections. The aroma is elegant, with pleasant floral scents that alternate with light undergrowth notes. Dry and slightly bitter on the palate, velvety and harmonious, well structured with good sapidity. Persistence is also good.
FOOD PAIRINGS
Excellent as an aperitif, it goes well with fish, white meats, and vegetables. Try it with risotto.
