THE WINE
The Pinot Bianco from the Ermacora winery comes from 100% Pinot Bianco grapes grown in the vineyards owned by the winery. We are in the hills of Ipplis in the heart of the Colli Orientali del Friuli DOC in Friuli Venezia Giulia. Explaining this area of Friuli is difficult, you have to come and visit it to discover a series of terraced hills, protected by the Julian Prealps which enjoy the breezes of the Adriatic Sea. A set of vines alternating with woods rich in biodiversity, in short, a true paradise.
The Ermacora winery compares the Pinot Bianco to the actress Audrey Hepburn in “Breakfast at Tiffany’s”. An elegant and sober wine that has been cultivated in Friuli since 1870; we are talking about a very high-quality wine that gives its best precisely in the hills of Ipplis.
THE WINEMAKING
The harvest is manual. Once in the cellar, after destemming the grapes are softly pressed and left to ferment in steel tanks at a controlled temperature of 17/18 °C.
The wine ages in steel tanks for at least six months. After blending and bottling, it rests for a few more months in the cellar before being placed on the market.
THE TASTING
Bright straw yellow; the aroma is elegant with pleasant floral hints of lily of the valley which leave room for fruity notes of yellow apple to continue with lemon leaf and close with puffs of mint. Fresh and pleasantly savoury on the palate with a perfect correspondence between aromas and flavour. The finish is long and persistent.
FOOD PAIRINGS
It goes well with fish, white meats and medium-hard cheeses. Try it with San Daniele raw ham. Try it with asparagus risotto or a nice vegetable soup.
