THE WINE
The Pinot Bianco Santarosa from the Castello di Spessa winery is part of the Collio line; 100% Pinot Bianco grapes grown in vineyards owned by the winery and located in Capriva del Friuli. The vineyards are in the heart of the DOC Friuli, not far from the border with Slovenia, where the soil is made of clay and sand with gravel that in Friuli is known as “ponca”.
THE WINEMAKING
After the harvest that occurs at the end of August, the selected grapes are taken to the cellar for winemaking. The fermentation in steel tanks at a controlled temperature that varies between 16 and 18°C. The wine then ages partly in steel and partly in French oak barriques until the March following the harvest. After assembly and bottling, the wine rests for a few more months in the cellar before being released onto the market.
THE TASTING
Straw yellow with sparkling golden reflections; the aroma is intense, with pleasant notes of tropical fruits that leave room for hints of pear and bread crust to close with puffs of acacia flowers. Soft and velvety on the palate, well structured with an excellent correspondence between the aromas and the flavor. Excellent persistence.
FOOD PAIRINGS
The Pinot Bianco Santarosa goes well with cooked and raw fish, semi-hard cheeses, and pasta dishes with vegetable sauces.
