The Classic Method Brut by Tenute Vidi
THE WINEMAKING
The grapes are hand-harvested, and the selected ones go quickly to the cellar for winemaking. The process begins with a gentle pressing. Fermentation occurs in steel tanks at a controlled temperature. The wine ages on the lees in steel until the end of May following the harvest, when it is bottled on the lees for a second fermentation, adhering to the rigorous Trentodoc specifications; the sparkling wine then ages for over forty-two months on the lees. After disgorgement, it rests for at least four more months in the cellar before being released to the market.
Tasting the Classic Method
Straw-yellow with an elegant, minute, and continuous perlage; the aroma is intense, showcasing pleasant fruity notes of peach complemented by floral scents reminiscent of acacia flowers, followed by hints of mint and subtle notes of bread crust. It is elegant and fresh on the palate, displaying complexity with excellent harmony between its aromas and flavours. It is pleasantly persistent.
FOOD PAIRINGS
Vidi Brut Trentodoc is excellent as an aperitif and pairs perfectly with first and second courses featuring fish or white meat. It is also a delightful complement to shellfish dishes.
