The Wine
The Pinot Grigio “Sot Lis Rivis” of the Ronco del Gelso winery is produced with 100% Pinot Grigio grapes grown in the vineyards planted in the area named Sot Los Rivis from which the wine takes its name.
THE WINEMAKING
After the strictly manual harvest, the selected grapes are brought to the cellar for winemaking. The grapes are softly pressed and left to ferment in steel tanks with the use of selected yeasts, at a controlled temperature of 19 ° C. The wine is then racked into used large 25 hl oak barrels where it ages for about one year; after assembly and bottling, it rests a few more months in the cellar before being placed on the market.
THE TASTING
Straw yellow with golden reflections. The aroma is fruity with pleasant hints of white peach and pear which are well intertwined with pineapple notes to close with pleasant balsamic puffs. Warm on the palate; it is a well-structured wine with excellent flavor. Persistence is also very good.
FOOD PAIRINGS
It goes well with fish, even raw. Must try with swordfish carpaccio marinated in citrus fruits.
