The wine Cabernet Franc Confinis from Francesco Rotolo winery
This Cabernet Franc, like all Confinis wines, is relatively young; in fact, the winery was founded in 2017 from the will of Francesco Rotolo, who, in addition to being a young winemaker, is also a son of art; in fact, his family created two wineries, Mario Schiopetto and Volpe Pasini.
Francesco selected a few hectares of hills between Capriva del Friuli and Cormons where, thanks to his experience, he wants to create fresh and pleasant wines with low alcohol content.
A grape variety of great nobility and class, Cabernet Franc cultivated in Friuli reveals extraordinary balsamic qualities and elegance, characterized by fresh and spicy notes, accompanied by a satisfying and complex structure, typical of a northern red wine with a Friulian soul.
THE WINEMAKING
The harvest is strictly manual and occurs in the first ten days of September . Once in the cellar, the must ferments in steel for a period ranging between 15 and 20 days at a controlled temperature of 18/20° C. The wine ages in steel for about seven months, and after bottling, it rests in the cellar for a few months before being placed on the market.
Tasting the wine by Francesco Rotolo
Ruby red, on the nose, offers a complex bouquet of red fruits, such as currants and cherries, accompanied by herbal notes and light spices. The wine is soft and structured on the palate, with elegant tannins and good acidity that ensure freshness and longevity. The finish is persistent, with hints of tobacco and dark chocolate that evolve with ageing.

This wine pairs well with red meat dishes, such as roasts and braises, as well as grilled meats and game. It is also ideal with aged cheeses and mushroom-based dishes. Its versatility makes it an excellent accompaniment for many cuisines, from traditional Italian to more refined and gourmet dishes.
